Arizona Western College
The Culinary Arts Certificate is designed to prepare you for a creative and excitingfood service career working in restaurants, resorts, catering, hospitals, schools, and cruise ships.
In this program, you will develop creative skills in food preparation and presentation. You will also explore otherareas of study that include menu planning, nutrition, personnel supervision, and sanitation. Dynamic industry experience is also incorporated into the academic training.
Programs
Production Kitchen I
In this lab course, you will learn skills and techniques in the production of various hot foods such as meats, fish, poultry, stocks, sauces, soups, vegetables, pasta, and other side dishes.
Production Kitchen II
In this lab course, you will learn skills and techniques in the production of various baked goods such as yeast breads, quick breads, pate a choux, puff pastry, cakes,pies, cookies, pastry cream, and dessert sauces.
Garde Manger/Dining Room
This lab course is designed to teach you the skills and techniques needed in the productions of both cold and hot foods, such as appetizers, salads, terrines, galantines, pates, sandwiches, sausages, and food carvings. You will also practice table setting and table service.
Taking classes full-time, you can complete this 25-credit certificate in two semesters. Each fall semester, students begin with the academic classes and continue in the spring semester with the hands-on training.
