Carson-Newman College (Foods, Nutrition, and Dietetics Major)
The mission of the foods, nutrition, and dietetics major and Commission on Accreditation for Dietetics Education (CADE) accredited Didactic Program in Dietetics (DPD) at Carson-Newman College is to provide students a high quality academic preparation for professional roles as entry-level dietitians and for graduate study while providing service courses and expertise to other programs of the college. The specialized program offers an integrated, generalist, undergraduate preparation in family and consumer sciences in the context of a caring and nurturing, Christian, liberal arts environment.
1. The program will provide a high quality Bachelor of Science degree program in foods, nutrition and dietetics which enables students to gain a mastery of the knowledge, skills, and competencies required for entry-level dietitians and nutritionists.
• Seventy-five percent of students with 64 credit hours or more who have taken at least one 300 level nutrition course will successfully complete the program.
• Eighty percent of DPD graduates will successfully complete the registration examination on the first attempt.
• Eighty percent of one year graduates will rate their program preparation as satisfactory or better in the foundation knowledge and skills areas.
• Eighty percent of dietetic internship directors will rate the interns from the DPD as prepared or well prepared as compared with other interns.
• Seventy-five percent of students who apply for a dietetic internship will be placed.
2. The program will support other areas of study within the college such as nursing, pre-health professions, exercise physiology and athletic training by providing required and elective courses as well as professional expertise.
• The introductory food and nutrition courses will attract a minimum of thirty students annually from health-related majors (non FCS).
• Seventy-five percent of students from health-related majors will rate the courses as satisfactory or better on an exit course evaluation instrument.
3. The program will encourage students to develop personally and to become active professionally.
• Fifty percent of graduates will accept internships that include graduate credit.
• Fifty percent of graduates responding will have completed some graduate work at the three year follow up survey.
• Ninety percent of graduates will indicate the program prepared them adequately or better in regard to professionalism.
• Ninety percent of dietetic internship directors will indicate the students performed adequately or better as professionals.
• Seventy-five percent of graduates will list one or more professional activities after being employed for three years in the profession.
