Dear Friends and Cooking Enthusiasts

I want to wish you all a Happy New Year! I hope that your holidays were joyful and stress free and that the coming year will overflow with fulfilled promises and growth.

I invite you to ring in the New Year with new menus and classes. March 5th the New Pasta class offers some fantastic new recipes - the Spaghetti with Chicken Carbonara is my mom’s recipe and she would agree with me it’s the best Carbonara recipe. On Wednesday March 12th, I am repeating our Southwestern Cuisine. This class and recipes are inspired by last year’s visit from Chris, the chef at Canyon Restaurant. You must sign up for this class, I promise you will love it! The Smoked Salmon Tostada and the Chipotle BBQ Pork Tenderloin are absolutely outstanding. As a matter of fact, this class is one of my favorites to teach. March 20th is the Osso Bucco class again and I guarantee that you will love the menu - the baked ricotta appetizer is to die for and the tiramisu is a good as any I ever had!!!

We have also rescheduled Ricky’s class (the executive chef from CASA D’ANGELO). Ricky was out of town last year running the kitchen at Angelo’s new restaurant in the Bahamas. His handmade Gnocchi are the fluffiest and absolutely the best! Be sure to reserve your seat as soon as possible since this class is certainly going to sell out.

I also want to thank those of you that responded to our questionnaire and reviewed our classes on the Internet. The reviews and comments were fantastic. Thank you so much for taking the time to share your opinions. We appreciate the support and your feedback provides me with information to keep the classes fresh and exciting for your continued enjoyment. Your enthusiasm inspires me to cook great food and strive to give you the best and most efficient cooking classes. I look forward to cooking for you this coming schedule and all through the rest of 2008!
