County College of Morris (Culinary Arts Certificate )

This certificate program is designed to fulfill the needs of a student working in the hospitality field, either as preliminary training to the career or as continuing education within the industry. The coursework provides basic skills and training in the areas of stocks and sauces, soups, meats and game, poultry, seafood, vegetables, pasta, stir-fry, sushi, garde-manger and charcuterie, buffet service, baking, pastries, mousses and ice creams, desserts, and cookies. In addition, foodservice sanitation, safety and regulatory issues are emphasized.
