San Joaquin Delta College




Students enrolled in the Culinary Arts Program are preparing for a career in the exciting and expanding foodservice industry. Hands-on experiences in all facets of food preparation is provided. Course work encompasses supervisory and managerial responsibilities such as sanitation, menu planning, management, cost control, purchasing, cooking, baking, and restaurant operations. There is emphasis on culinary techniques in all lab classes. Course work is demanding; physically and academically. Classes require stamina, an ability to work under pressure, and exceptional teamwork skills while providing excellent guest service in the campus restaurant, The Student Chef. Students may pursue an Associate of Arts Degree, Associate of Science Degree, or a Basic and Advanced Certificate.

Certificate and Degree Programs

Basic Culinary Arts
The Basic Culinary Arts Certificate provides for an introduction to the field of Culinary Arts and verifies to potential employers the completion of basic courses. Students are required to complete all courses (8 units) with a grade of “C” or better at San Joaquin Delta College.

Advanced Culinary Arts
The Advanced Culinary Arts Certificate provides for an in-depth study of Culinary Arts. Completion of the Advanced Certificate expands employment options in Culinary Arts and related fields. Students are required to complete all 43 units of courses required for the certificate with a grade of “C” or better. A minimum of 12 units must be completed at San Joaquin Delta College.

Baking and Pastry
The Advanced Baking and Pastry Certificate provides an in-depth study of the Baking and Pastry disciplines. Completion of the Advanced Baking and Pastry Certificate will support increased opportunities in employment choices within the baking and pastry professions. Students are required to complete all 26 units of the listed course work with a "C" or better. A minimum of 12 units must be completed at San Joaquin Delta College.

Associate in Science Degree
The Associate in Science Degree in Culinary Arts includes 43 units of Culinary Art courses, which combined with 21 more units of general education courses, conform to the 64 units required for the A.S. Degree. Students are required to complete all 64 units with a grade of “C” or better. A minimum of 12 units must be completed at San Joaquin Delta College.
