SUNY Cobleskil (Culinary Arts, Hospitality and Tourism Department)
Two degree programs are offered in Culinary Arts. One is a certificate in commercial cooking and the other is the AOS degree in culinary arts which is accrediated by the American Culinary Federation's Accrediting Commission.
The SUNY-Cobleskill student who graduates with an AOS degree in Culinary Arts have had the benefit of excellent faculty and outstanding opportunities to learn in the classroom and laboratories. There are three student clubs in the program. The Student Fine Foods Club, Junior American Culinary Federation Club and the Student Ice Carving Club are co-curricular opportunities for culinary students to have leadership and organization experience which will help their careers. The SUNY Cobleskill culinary arts program is designed to provide rigorous and concentrated training to students who plan to pursue careers in the rapidly expanding food service industry. The primary goal of the program is to prepare students for an entry-level position in the food and restaurant business. In addition, the curriculum is designed so that graduates:
Are proficient in classic and contemporary culinary techniques and cooking methods described in the competencies of the American Culinary Federation.
Recognize the different culinary techniques and foods served in American and international cuisines.
Know nutrition, food safety, and cost control techniques and their importance in menu planning and successful foodservices.
Learn how to keep a business profitable through studies in marketing, computers, management, communications, and finance.
