As dining out gains in popularity throughout the country, the food service industry is expanding at a rapid rate. The expectations of consumers are rising accordingly and demands are being placed upon the industry to respond to increasing needs for service, quality, nutrition, and diversity of product and flavor.

The curriculum for this program is designed to provide hands-on instruction in fundamental cooking and culinary skills. Students develop an in-depth understanding of basic cooking techniques, purchasing, and baking, as well as dexterity in knife skills, speed, timing, coordination, and presentation. Combined with these studies are career development courses and an externship course that enables students to apply their newly acquired skills outside the classroom in settings that truly put their knowledge to the test.

Step by step, students learn the chemistry of food, how ingredients are combined, and the intricacies of recipe preparation. Techniques used by professional chefs are taught through demonstrations and hands-on training.

Students are prepared to begin a career in entry-level positions such as prep cook or line cook at restaurants, hotels, clubs, resorts, convention centers, retirement homes, hospitals, and corporate dining facilities.

The Culinary Arts program offers students a balance of culinary theory and practice. This is a 4-quarter (full-day) or 6-quarter (part-day), and is delivered through classroom and laboratory instruction.

The Culinary Arts certificate program guides students toward a career path that offers the potential for creativity and rapid growth.
