Few occupations offer the creativity, excitement and growth found in the culinary industry. Chef instructors at The International Culinary School at The Art Institute of Philadelphia are experienced and offer students the expertise and knowledge needed to become professionals. Coursework for the Culinary Arts programs is based on classical principles emphasizing modern techniques and trends. Students develop basic skill sets such as knife and hand skills and are introduced to specialty areas such as baking, pastry, charcuterie, and international, classical and American cuisine. The Culinary Science, Sanitation, Safety & Supervisory Skills course familiarizes students with sanitation issues and the proper procedures of food safety. Instruction in kitchen management, purchasing and cost control, menu design and dining room operation provides students with a solid business background.

Throughout the Diploma and the Associate of Science Degree programs, students benefit from working with industry-experienced faculty while working together with other students to enhance essential teamwork skills. Students gain hands-on experience operating the school restaurant, Petite Passion, working in the kitchen and the front of the
house.

Applying the skills they have acquired in a real-life setting, students in the Diploma program complete one internship and students in the Associate of Science Degree program complete two internships at restaurants, hotels, clubs or resorts,

By graduation, students from the associate’s and diploma programs are prepared for entry-level positions in the field including prep cook, line cook, and first cook. Once enriched with additional professional experience, graduates may obtain more advanced positions such as sous-chef, chef, and executive chef.
