Winner Institute of Arts & Sciences (Culinary Arts Program)

The demand for well-trained chefs and cooks has grown rapidly in the recent years. This specialized curriculum is designed to provide the student with an extensive hands-on instruction in cooking and baking skills that will prepare graduates for entry-level positions in the field of culinary arts. Emphasis is placed on developing manual dexterity, speed and timing, all of which are essential in today's workplace. The program focuses on basic cooking techniques, food service management, and the skills to be successful in school as well as on the job.

This 15-month Associate in Specialized Technology degree program offers 90 quarter credits or 1608 clock hours of instruction. Courses may be credited by demonstrated proficiency examinations. The order in which the courses are offered is at the discretion of the school.

The focus of the Culinary Arts Program is to develop an in-depth knowledge of basic cooking techniques as well as to develop the student's dexterity of knife skills, speed, timing and coordination.

While engaged in the program, students may be assigned to small group instructional groups. Students will attend related and general education classes and are required to complete and externship portion of the program.

During the lab portion of the program student actively engage in effective optimal sanitary conditions through learning assignments related to the cleaning and sanitizing of lab areas and equipment. Strict sanitation and safety regulations are practiced and enforced, reflecting the Institute's concern that such practices be an integral part of all good service operations for the health and safety of personnel and guests alike.
