Incas Cuisine
It is also know as Andean cuisine, which origin starts in pre-Columbian times. Andean food was based on tubers, like potatoes and yuccas; roots and grains like maize; and meat like guinea pigs, dried fish and llamas; and due to its wild and different landscapes there was a great diversity of plants and animals. Some of their culinary methods were either by accumulating hot stones in cooking vessels, or by the use of huatias which were a type of earth ovens containing a paila, an earthenware bowl.
