Lambuth University (Food and Nutrition)

Lambuth University is now offering a Bachelor of Science degree in Foods and Nutrition with two concentration areas: 1) Foods and 2) Nutrition.

The degree option with a concentration in Foods incorporates many of the current course offerings. It includes new courses in Cultural Foods and Experimental Food Science. It also includes business and management courses. This degree option should properly prepare students to enter the food and restaurant industries in positions such as restaurant owner, restaurant manager, hospital or school foodservice manager, and food science and food technology positions in the food industry.

The degree option with a concentration in Nutrition adds many new course offerings. Nutrition courses include assessment, education, health promotion, metabolism, and medical nutrition therapy. Foods courses include cultural foods and experimental food science. Business/ management courses include food systems management, principles of management, and accounting. The goal is to use this concentration to apply for accreditation with the American Dietetic Association for a Didactic Program in Dietetics.
