Madagascar Cuisine

Madagascar dish

Madagascar cuisine is based mainly in rice and its varieties; but in some southwest places the rice may be replaced by maize. Their bigger influences have been the French, Chinese, Indian, East African and Arabian cultures.

Some of the typical accompaniments with rice, which would vary according to the local available and in season, are voanjobory, kitoza, trondro gasy, ravitoto, beef or chicken sauteed with ginger, romazava, pumpkin-peanut puree, tsaramaso, and various types of seafood.

Their most used ingredients are garlic, onions, ginger, tomatoes, mild curry, salt, coconut milk, vanilla and spices such as cloves.
