       Cacciatore: meal prepared in a hunter-style, with tomatoes, onions, mushrooms, herbs and wine.

   Cacik: yogurt with cucumber and mint.

   Caciotta cheese: rural cheese made of either ewe's, cow's or sheep's milk.

   Cantal: French semi-hard cheese made from pasteurized cow's milk.

   Capers: small buds used as piquant flavoring or garnish.

   Caramelize: process of the sugar oxidation and mainly used in pastries to obtain a nutty flavor and brown color.

   Caster sugar: extra fine granulated sugar.

   Caviar: processed and salted roe of various species of fish, especially sturgeon.

   Condensed milk: cow's milk in which has been removed the water and added sugar, it is used in pastry and desserts.

   Cornish Pasties: individual potato and meat pies.

   Cress: plant used in salads and garnishes, also known as Watercress.

   Culatello: ham cured and soaked in wine during aging.

   Currants: small and rounded fruits with smooth skin, usually dried and used like raisins.

     Cutlet: small cut of meat of calf, mutton or lamb.
