   Udo: Japanese vegetable similar to asparagus and it is used in raw salads and dishes.

   Udon: Japanese and thick noodle made from wheat flour.

   Unflavored gelatin: animal product gelatine which is used to give shape to sweet dishes.

   Ugli fruit: tangerine grapefruit hybrid.

   Unsalted butter: also known as sweet butter, which is butter with no salt.

   Utility knives: effective tools for mincing and slicing, but not recommended for heavy handle tasks like chopping.

   Umeboshi: immature Japanese plums soaked in brine and red shiso leaves to be used as condiment.

   Unsweetened chocolate: baking chocolate which is made by mixing half cocoa butter and half chocolate solids.

   Unleavened: term used to describe baked goods made with no leavener.

   Unmold: to invert the mold over some plate in order to take it out from the mold in which it was made.

   Upside-down cake: culinary process for cakes in which the base of the mold is covered with butter, sugar and some fruit, and then the cake mixed is over. Once, it is baked, the cake is inverted so the glazed fruit becomes the top of the cake.
